WEBHave a coffee or a stiff drink. Put the head into a large stockpot and cover with cold water. Add the trotter, ears, onion, star anise and bay leaves. Bring to the boil and then reduce to a simmer for 3-3½ hours, when the flesh will be soft and pull away from the head if you prod it. Remove the ears after 2 hours, rinse and leave to cool.

WEBWash the plums and remove any stalks. Prick all over each fruit with a clean pin or fork, then halve the fruits but leave the stones in. Place these in a large (2 litre), sterilised mason jar, add the sugar and pour the gin over the top. Ensure all the fruits are submerged, otherwise they will spoil. Keep the gin bottle.
